The traditional food of Xiting sesame seed cake has a long history dating back to over a hundred years ago.

烤脆饼的炉子是用宜兴的紫泥加黄泥制作而成,一炉可以贴180个脆饼。 “西亭脆饼十八层,层层分明能照人,上风吃来下风闻,香甜酥脆爱煞人。”

在江苏南通通州区千年古镇西亭流传的民谣,唱的就是这里出产的西亭脆饼。西亭脆饼始于清朝光绪年间,历经百年而不衰。老字号纯手工制作,是西亭脆饼的一大特色。

西亭脆饼采用专供的精白面粉、优质白砂糖、纯白芝麻为主要原料,从和面到出炉,经过配料、制馅、包酥、压皮、上麻、烘烤等28道工艺流程,坚持原汁原味的手工制作。

饼胚贴上黄泥炉壁后,经优质无烟煤炭微火烘烤一个小时左右才出炉,脆饼色泽金黄,香甜酥脆,虽不足两公分厚,但是竟有十八层。

近年来,西亭脆饼厂在原有传统特色的基础上不断创新,开发了椒盐、含硒、低糖和玉米、高粱、荞麦杂粮脆饼等二十多个品种的脆饼,并先后荣获首届中国食品博览会金奖、江苏名牌、江苏省著名商标等称号。2009年6月,西亭脆饼制作技艺被认定为江苏省级非物质文化遗产。
